Our moroccan kale salad is a mix of massaged shredded kale, roasted purple cauliflower, butternut squash, picked cilantro leaves, slivered blanched almonds and sliced dried apricots. All of these components are topped with harissa-stewed chickpeas (made from dried beans that we soak for 24 hours to achieve optimal digestive qualities). We serve it with our creamy harissa dressing (made creamy with a sugar free, probiotic coconut yogurt).
Ingredients: chickpeas, lacinato kale, purple cauliflower, butternut squash, almonds, unsweetened dried apricots, cilantro, Cocojune coconut yogurt (organic coconut, spring water, organic cassava root, vegan probiotic cultures), harissa powder, tomato paste, cumin, smoked paprika, tahini, lemon zest and juice, 4some (Sicilian sea salt, black pepper, garlic granules, onion granules), Sicilian extra virgin olive oil.
