We achieve our scampi's luxurious texture by sweating leeks in biodynamic white wine, creating a creamy mouth-feel sans a lick of dairy. This subtle perfection is tossed with palmini noodles (the inner core of the palm tree, otherwise known as hearts of palm, making them low in carbohydrates and completely free of grains), chopped parsley, garlicky spinach, lemon zest, and lemon juice to make the base of the scampi upon which our lemon-y seared trumpet mushroom "scallops" rest.
