Moussaka is a glorious Greek casserole, kinda like a lasagna, traditionally layered with eggplant, stewed ground beef, crushed tomatoes, heavy cream béchamel, mashed potatoes and tons of vibrant, surprising spices such as cinnamon, nutmeg, and oregano. Delicious, no doubt, but quite heavy, indeed! Our vegan moussaka references the classic dish in flavor and texture, but by replacing the heavy cream potato crust situation with our lusciously homemade cauliflower béchamel and by using sautéed mushrooms, lentils, San Marzano tomatoes, and fresh mint and parsley, we transform a comforting casserole into an out of this world delightful that is as friendly on tastebuds as it is on waistlines!
