insalata eoliana with pole-caught wild tuna

After spending ample time in the Aeolian Islands, it only seems fair to share their moved beloved and ubiquitous salad: insalata eoliana. This Aeolian salad is found at practically every restaurant/bar/lido on all seven islands and is a hearty and tasty as it is fresh and healthy. We're serving ours with a side of arugula and an herby vinaigrette. Try it for yourself! 

Ingredients: wild and sustainable pole caught albacore tuna, local heirloom mini tomatoes, potatoes, Castelvetrano olives, red onions, capers, arugula, mint, parsley, basil, dried oregano, red wine vinegar, apple cider vinegar, balsamic vinegar, Sicilian extra virgin olive oil, 4some (Sicilian sea salt, black pepper, garlic granules, onion granules)
