classic chicken salad with mixed lettuces

Since chicken salad is really having a moment, we figure we better jump on the bandwagon and show everyone how it's done! Served with a stack of lettuce cups, this lunch is best enjoyed at the beach.

Ingredients: organic chicken breast, 4some, Primal Kitchen mayo (avocado oil, vinegar, eggs, salt, rosemary extract), Cocojune plain unsweetened yogurt), lemon juice, Dijon mustard, celery, red onion, pickles, apple cider vinegar, dill, parsley, mixed greens
