eggplant rollatini with ricotta + pecorino

Paper-thin slivers of roasted eggplant are rolled with a mixture of the trifecta (mozzarella, ricotta, and pecorino), then smothered with our homemade San Marzano tomato sauce, and topped with more cheese. A delicious delight!

Ingredients: eggplant, San Marzano tomatoes, yellow onion, garlic, mozzarella, ricotta, pecorino, Sicilian extra virgin olive oil, Sicilian sea salt, black pepper, Italian seasoning, dried oregano, basil
