Our vegetarian version of the kale greek salad is a mix of massaged shredded kale, tomatoes, cucumbers, pickled red onions, kalamata olives, pepperoncini, and house made almond feta (a MUST try!). It is then topped with creamy gigante beans (made from dried beans that we soak for 24 hours to achieve optimal digestive qualities) and crispy tricolor quinoa. We serve it with our zesty oregano vinaigrette, which features dried oregano from Sicily!
