Our rainbow vegetarian niçoise salad has stewed cannellini beans (made from dried beans that we soak for 24 hours to achieve optimal digestive qualities), hard-boiled eggs, blanched green beans, blanched purple potatoes, dry-cured black olives and cherry tomatoes. All of this is served on a bed of fluffy mixed greens and served with our house-made dijon vinaigrette.
